An Old Hotel Bar in Torino

A sample review of a bar that understands the difference between service and hospitality.

The room is small and it has not been updated, which is the first thing in its favor.

Dark wood that has been touched by a hundred years of sleeves. Brass that is polished but not new. A bartender in a white jacket who does not introduce himself as your guide to the evening, because he understands that the evening is not about him. He sets down a coaster, waits, and takes the order without turning it into a performance.

The negroni is correct. Not clever, not deconstructed, not served over a single hand-carved sphere with a story attached. Equal parts, stirred, a wide strip of orange, cold and bitter and exactly itself. It arrives with a small dish of olives and another of chips, and no one mentions them, because mentioning them would be like pointing out that the floor is holding you up.

What the place understands is the difference between service and hospitality. Service is the correct execution of tasks. Hospitality is making a stranger feel, for an hour, like a regular. This room does the second thing without seeming to try, which is the only way it can be done.

I would go back tomorrow. I would go back tonight. That is the whole review.
